My Story

As a clinical nutritionist and chiropractor I have seen a lot of people with a variety of problems respond very well to a grain-free (and dairy-free) diet.

The young daughter of a patient of mine was diagnosed with ulcerative colitis. As you can imagine, the mother was devastated.

Of course, her medical doctors insisted that diet had nothing to do with the girl’s condition. After some research,  I found the Specific Carbohydrate Diet — a grain-free diet. The basic concept of the diet — that undigested sugars and starches primarily from grains causes an imbalance in the gut flora. These undigested carbohydrates become food for pathogens, and these pathogens multiply and take up strong residence in the gut.

Any damage to the lining of the digestive tract also causes a loss of the digestive enzymes that are embedded in the lining. Therefore, digestion is further compromised. This can eventually develop into a disease process. If the carbohydrates are continuously eaten, it drives the cycle, and the symptoms as well as the intestinal damage gets worse and worse.

The concept of this vicious cycle makes so much sense, I wondered why I hadn’t come across it sooner.

Around this time, I started to experience multiple chemical sensitivities and food allergies  — as a result of leaky gut and my son started to have food allergies as well. So we all started the diet together.

Hi! I have been reading about the gaps diet for a while, and I have two questions: What if mercury is a problem? I have heard that you have to detox from that before the candida will ever go away. And also, in your experience is there a stopping point for the gaps diet, and can someone eat anything they want (obviously real food) after they finish the diet? I have trouble with bloating at all different times, and legs aching/tingling and some minor joint pain. (Plus a bunch of other stuff that I can fill you in on if you want to know.) :) Thank you.

Hi Kristie,
The GAPS diet can help with mercury detox in a very slow and gently way, although some people would require more focused treatment for that as well.

Many people will be able to go on to a real food diet after GAPS. Some need to be on it longer. Everyone is different.

Many varied and seemingly unrelated symptoms can be resolved with diet modification.
