I was so excited to see that Hayley Mason and Bill Staley just released a new cookbook called Make it Paleo II. I love their other cookbooks for their elegant yet simple recipes. After you read the review, go enter the giveaway for your own copy!
Make it Paleo II is another gorgeous book by these authors that is truly eye-candy, even when you are looking at chicken. They are well known for their food photography and I am so happy they are in the Paleo community. Their food is not only gorgeous – it is truly healthy.
All the recipes are Paleo friendly and I love that there are notations in each recipes that indicate if it is dairy-free, nightshade-free, nut-free and egg-free, so that peeps on limited diets can quickly see if a recipe is appropriate. There is also an extensive table of recipes at the back of the book that outlines these options.
The recipes are a diverse group of fabulous selections from the world cuisine that are tweeked for Paleo. I especially love the chicken en brodo – a simple recipe that looks and sounds totally savory and perfectly seasoned. This dish really appeals to me.
I also love the lemongrass chicken curry. The instructions make a complicated dish sound very easy to prepare. I’m definitely going to be trying this one.
I also love the skillet chicken thighs. This has to be one of the best ways to make chicken thighs (which I love). Here again, the dish is perfectly seasoned and the addition of artichoke hearts, olive and capers makes my heart flutter! Wow! Clearly I love the chicken recipes!
But there are lots more recipes for seafood, meat, eggs and vegetables. Of course, there are great recipes for the staples like spice blends (wow these look great), cured bacon (OMG), cured salmon (OMG again!), chicken and beef stock, pickled burdock root, ginger beer and so much more.
The book has very good sections on using grain-free flours and starches, natural sweeteners, nut milks and leavening agents as well as a great chapter on the kitchen tools necessary for a real food, Paleo kitchen. Importantly, cooking techniques is another section that is invaluable to an aspiring home chef.
There are also two chapters on the basics of the Paleo Diet and the underlying theory.
I love this book!
