Recipe: Cassava Raisin Cookies (Paleo)

Ingredients
- 4 eggs
- 1/4 cup shortening
- 1/4 cup maple syrup
- 1 tsp vanilla
- 1/4 tsp stevia
- 1/4 cup + 2 Tbsp cassava flour (add the extra flour if you need to make the batter pourable but not stiff)
- 1 Tbsp coconut flour (add only if you need to make the batter thicker)
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 cup shredded coconut
- 1/2 cup raisins (more if you love raisins)
Instructions
- Preheat oven to 325ยบ F and prepare cookie sheets with parchment paper
- In a food processor add all the liquid ingredients and mix
- Add all the dry ingredients except the raisins and mix
- Be sure the batter is pourable
- Add the raisins
- Add the raisins and just mix
