Recipe: Slow Cooker Coconut Curried Chicken

  1. Place the carrots, onion and garlic at the bottom of the crock pot
  2. Place the raw chicken pieces on top of the vegetables, layering the chicken
  3. Add the spices over the chicken
  4. In a small pot melt the ghee and mix in the chicken stock and coconut cream until combined
  5. Pour this over the chicken
  6. Cook on low for 6 hours (it can go longer if you are not home yet)
  7. When done, remove the pieces of chicken and puree the liquid for gravy with an immersion blender
  8. Serve or refrigerate for later
