Recipe : Fermented Rhubarb

For the Brine

Instructions

  1. Clean the rhubarb and chop into 1″ pieces
  2. Chop the garlic
  3. Add the bay leaf, mustard seed and garlic to a quart mason jar
  4. Add the chopped rhubarb
  5. Mix the brine and pour over the vegetables leaving 1 inch space at the top
  6. Weigh down with a glass weight (like these)
  7. Cover jar with an airlock
  8. Place in a warm place in your house and culture 1 – 2 weeks
