Your kids will love this Coconut Milk Gummy Candy recipe. Beyond that, the candy is made with nutritious gelatin and coconut milk!

This is the perfect for-trade candy to have on hand when your kids come home from school. We had a policy in my house for my son to trade in the junk candy he was given in school (oh boy… don’t get me started on that one) and get a healthy treat or a non-food treat in return.

This policy worked well for us.

My job was to make sure I had those healthy treats on hand. This is one of them.

Not only is this gummy candy made with non-dairy coconut milk – it has no chemical additives, coloring or flavors– it is made with gut, bone and skin healthy gelatin!

And it is so easy to make!

Collagen is Good for Gut, Joints and Skin

Gelatin is simply the cooked form of collagen. Collagen tissue makes up 50% of the protein in the body, as it is the primary protein in connective tissue – the tissue that makes up fibrous tissues like tendons, ligaments, bone, cartilage and skin. Collagen makes up the matrix of joint cartilage and skin as well as cornea, cartilage, bone, blood vessels, the gut lining, and intervertebral discs.

Biochemically, there are several different types of collagen which appear in different types of tissue from bone, tendon and ligament to mucous membranes throughout the body including the intestinal tract and the cornea of the eye.

Gelatin is Easy to Use

The commercial jello products that are on the market today, as you probably know, are loaded with artificial flavors, colors and sweeteners and/or sugar. I do not recommend any of these products.

However, it is so easy to make your own gelatin gummies (and jello) from a superior grassfed gelatin product (I like this gelatin) and your own organic juices and sweeteners. Your kids will love it and so will you!

Eat some each day instead of expensive supplements.

Recipe: Coconut Milk Gummy Candy (Paleo, SCD, GAPS, AIP)

Yummy coconut milk gummies!

  • Total Time: 8 minutes

Ingredients

1 cup coconut milk (I like this one)
3 Tbsp coconut concentrate

2-3 Tbsp honey or maple syrup
1 tsp vanilla extract or powder
3 Tbsp gelatin (I like this one)

Instructions

  1. Gently heat the coconut milk in a small pot
  2. Add the coconut concentrate, honey and vanilla and mix well
  3. Slowly sprinkle the gelatin over the warm mixture, whisking vigorously until all the gelatin is combined
  4. Slowly pour the mixture into the silicone molds
  5. Refrigerate for at least 2 hours before popping the shapes out of the molds
  6. Store in airtight containers in the refrigerator
  7. These also freeze well

Notes

Use a spatula to clean the rim and fill the molds
