Recipe: Apricot Protein Snack Bar (SCD, GAPS, Paleo, AIP)

Paleo, AIp,snack bar



  1. Prepare a cookie sheet lined with parchment paper
  2. Place the dried apricots in a pot with water
  3. Warm up the apricots until soft
  4. Drain the water
  5. Place apricots in food processor with the collagen peptides, honey (optional), vanilla, cinnamon, sea salt, and ginger
  6. Process well
  7. Add the shredded coconut and pulse to combine
  8. Place the batter (it will be sticky) on the parchment paper
  9. Form a square or rectangle that is about 1/2″ thick, smoothing the top and sides as you work it into shape
  10. Place on the cookie sheet and place in the freezer for at least 2 hours
  11. Remove and cut with a chef knife into 9 pieces
  12. Wrap each piece in parchment paper or wax paper (they are somewhat sticky)
  13. Put into freezer safe contain and serve for a quick snack or treat
