Recipe: Coconut Berry Ice Pops (Paleo, Dairy-Free)

Coconut Berry Ice Pops, fresh fruit ices

Are you frustrated with commercial ices that have toxic colorings and additives? Here is a quick, child (and adult) friendly treat for a hot summer day that can be prepared in minutes. These fresh berry coconut ice pops are so refreshing!

There is no need to expose your kids to the additives and neurotoxins found in store bought ices.

It is so easy to make your own ices from fresh fruit and homemade ice cream.

With just a little planning  you can make these incredibly refreshing treats that are dairy free, additive free and added sugar free.

While there is a little naturally occurring fructose in the berries and the ice cream has a little honey, they are not overly sweet.

The popsicle molds are also a good way to exert control over snack size. The molds I used actually held only 1.5 ounces and yet the snack was still very satisfying.

These can be made ahead of time and stored in the freezer.

  • Total Time: 2 hours

  1. Puree the berries separately with a stick blender or regular blender and set aside
  2. Take out the ice cream and soften slightly
  3. Alternatively, you could use homemade coconut yogurt (how to make coconut yogurt) or regular yogurt if you eat dairy
  4. Using BPA free ice pop molds, pour a little of the strawberry puree into 1/3 of the mold
  5. Pour the yogurt next — about another 1/3
  6. Pure the blueberry into the last 1/3 of the pop molds
  7. Cover the molds with the covers that come to it or if you are using wooden sticks, insert them into the molds
  8. Place in freezer for a few hours until frozen
  9. When frozen, carefully pull out and serve!
  10. The molds you have may be a little different and may hold more or less of the ingredient amounts
