Need an SCD/GAPS appropriate dessert for that special occasion? With Father’s Day coming up you may want to check out this satisfying and festive dessert for that exceptional person. Here are instructions for putting together a layer cake from two videos I published previously.
The cake is from the Coconut Banana Blueberry Bars and may be used as is, or, just leave out the blueberries and you have a delicious banana cake as the base. The cream part of this recipe is from the Banana Coconut Cream Dessert recipe. In the short video below I put together the two pieces and you have a lovely layer cake that may be topped with whipped cream (coconut or dairy), yogurt and/or berries.
Coconut Cream Layer Cake
Ingredients
One recipe baked from the Coconut Banana Blueberry Bar recipe, but baked in two 9 x 13 pans so they are thin — for this application you will only need to bake at 350 degrees for 30 minutes
One recipe from the Banana Coconut Cream Dessert recipe in one 9 x 13 pan

Instructions
- Remove the thin layer of banana bars and cut two pieces into a rectangle shape of the same size
- You may have extra parts from the thin banana cake. These you can use as snack bars
- Cut the coconut cream layer into the same shape
- Simply put the layers together and trim around the edges
- Serve with whipped cream, yogurt or berries
- This can stay in the refrigerator for several days if it lasts that long
