What would a Thanksgiving meal be without stuffing? It’s actually easy to make a delicious grain free stuffing that everyone will enjoy! Eaten with savory roast turkey and gravy, it is a side that adds to a festive meal!
Ingredients
- 1 pound chopped chicken or pork (where to buy pasture raised meat and poultry)
- 1 large onion
- 1 small celery root or half of a large one
- 1 medium Daikon radish
- 1 pound mushrooms, cleaned and sliced
- 4 – 5 cloves garlic, minced
- 1 tsp dried winter savory (where to buy salt and spices)
- 1 tsp dried marjoram
- Sea salt and pepper to taste
- 1/2 cup chicken stock (how to make chicken broth)
- 1/2 cup raisins or fresh cranberries
- Coconut oil, tallow or lard for drying
Instructions
- Heat the fry pan and add the oil to heat up (medium heat)
- Chop the onion, celery root and Daikon radish into small cubes
- Saute the onions, celery root and Daikon for 6 - 8 minutes or until translucent and remove to a bowl
- Saute the mushrooms until they are soft and remove to the bowl
- Add the chopped meat to the pan and cook until pink is gone
- Add the chopped meat to the vegetables and mix, mixing in the minced garlic
- Add the dried spices, raisins (or cranberries) and chicken stock and mix
- Bake on 300º F for 20 – 30 minutes stirring it once or twice during this time
