Asian Shrimp and Cucumber Salad

Ingredients

  • 4 English cucumbers
  • 4 Tbsp sesame oil
  • 2 pounds medium shrimp cleaned with tails off
  • 1/2 chopped cilantro leaves
  • 2 red jalapeno, or Thai chilis
  • 2 limes
  • 2 Tbsp fish sauce (I used this one)
  • Sea salt to taste

Equipment

  • Large fry pan
  • Bowl

Instructions

  1. Cut the cucumber in half lengthwise and scoop out the seed
  2. Using a a sharp knife, cut the cucumbers into ribbons
  3. Peel and devein the shrimp
  4. Heat sesame oil in the pan over medium heat
  5. Add the shrimp, in batches if necessary, and cook, turning occasionally until cooked through – about 3 minutes
  6. Remove from heat and transfer to a cutting board
  7. Roughly chop the shrimp and transfer the shrimp and juices to a large bowl or platter
  8. Chip the cilantro
  9. Deseed the jalapenos
  10. Juice the limes
  11. Add the cucumber and remaining ingredients to the shrimp and toss to coat
  12. Serve immediately

Prep Time: 15 minutes
Cook Time: 6 minutes (2 batches)
